Today I believe was the introduction of the Crash - a vanilla cupcake with strawberry whipped cream filling, with a fresh strawberry cream cheese icing and a crash of tangerine hard candy crumbs. And I think also I made Angie’s request - a little tropical number out of “A Baker’s Field Guide to Cupcakes” - the Key Lime Coconut Cupcake. This was the first time I toasted coconut for any recipe, and I have to admit the taste and texture really add a lot!

For the first time today, I also gave the girls cupcake charms - we will work on charm bracelets sometime this summer. But I’m keeping the source of the charms a secret for now!

Today I made the Platypus - white cake with fluffy peanut butter filling and chocolate glaze. I also made a chocolate cake with an almond buttercream filling with almond glaze. The T-shirts arrived!!!!! Click on the picture for more pictures of the day.

Sammay requested a Snickerdoodle cupcake - and I found a wonderful recipe! I followed the cake recipe, and the cinnamon cream cheese filling recipe (first time I filled a cupcake!), but used a swiss meringue recipe instead

Made Red Velvet cupcakes with cream cheese icing in zebra print cupcake liners. The cupcakes were from a mix I got at Stater Brothers.

Second meeting, I made S’mores cupcakes, but with a vanilla not chocolate base. I used the left over marshmallow buttercream frosting to make s’mores shots. Here’s where I got the best marshmallow frosting recipe ever
